Dessert cake with walnut leaves and chocolate cream

It was: mix eggs with sugar until melted, add lard (at room temperature), add baking powder and baking soda soaked in lemon juice, lemon peel, walnuts and gradually flour. At the beginning, mix with a spatula, then knead by hand until a homogeneous and elastic dough results. Fold the dough in cling film and let it cool for 1 hour. Then divide the dough into 4 equal pieces that we will spread on the floured table, the size of the tray we will bake.

Bake them one by one, on the bottom of the tray, in the preheated oven, until they brown a little, about 8 minutes each.

Cream: in a cauldron or in a double-bottomed saucepan add flour, cocoa, sugar and with the help of the whisk we will mix adding the milk gradually. Put on the right heat until it thickens like a pudding, stirring constantly, then turn off the heat and add the butter at room temperature. Stir until melted, add ground walnuts, grated chocolate and essence to taste.

Cover with foil directly on the cream and let it cool very well.

In the tray in which I baked the sheets, add the first sheet-cream-sheet and so on until we finish with the last sheet.

Cover with cling film, add a weight on top and let cool overnight.

The next day, decorate as you like or powder with powdered sugar.



Walnut leaf cake and whipped cream with walnuts

We start with the preparation of the sheets. The above ingredients are for 3 sheets. I made 6 sheets from the start and filled them with two kinds of cream. It is true that I had an event to celebrate and I needed a lot of cakes.

I made the dough for the robot, but if you don't have a robot, the technique is the same, only you use a manual mixer.

I put soft butter, salt, vanilla essence and powdered sugar in the bowl of the robot. If you do not have powdered sugar at hand, you can use caster sugar but the working time will be longer.

Mix the butter with the sugar, vanilla, salt and powdered sugar until the composition becomes creamy and increases in volume. Then add one egg at a time and mix until the composition is homogeneous. Caution: do not add all the eggs at once. Then add the ground walnuts, all at once and mix at low speed. At the end we add the flour (mixed with the baking powder) and mix a little more until we incorporate the flour in the composition. Do not mix the dough too much.

The resulting dough, I put it in a plastic bag, I gave it a flat, regular shape and I put it in the fridge for 45-60 minutes.

Turn the oven to 180 degrees Celsius.

Remove the dough from the fridge and fold it into 3 approximately equal pieces. If you want accuracy, use a scale. There are 6 pieces in my picture because I told you that I made 6 sheets (doubling the quantities).

We keep only the piece of dough that we are going to spread on the work table, we put the rest of the pieces in the fridge. I also prepared sheets of baking paper in advance, cut to the size of 39/35 cm.

On a sheet of paper, I put the dough, covered it with another baking paper and then I spread it with the rolling pin, at the size of 26/31 cm. The dough can be seen very well through the baking paper placed on top so I was able to measure the size of the dough sheet.

When the dough sheet is stretched to the desired dimensions, remove the sheet of paper from above and transfer the dough sheet, along with the paper, onto a baking tray. Prick the dough sheet with a fork from place to place. Put the tray in the oven and bake for 7-8 minutes. When they start to get a golden brown color all around, it is a sign that they are ripe. Remove from the oven and transfer with paper to a worktop. Let them cool on the paper on which they were baked. The following sheets overlap with the baking sheets over the ones already baked and taken out of the oven. They are very tender and break easily. The cracked sheets are placed in the middle or even on top. It doesn't matter, they can't be seen anyway, they come dressed in cream.

For the cream, mix the cream until it increases in volume, add the powdered sugar and mix until it is incorporated. The resulting whipped cream must be firm, thick. Add the rum essence, mix a little. Then add ground walnuts and cocoa, mix with a spatula until it is incorporated into the composition.

On a tray, put the first sheet, add 1/3 of the cream and spread evenly. A wide-bladed knife is used to spread the cream. Put the second sheet & # 8230cream, sheet and cream again. The cake assembly ends with a layer of cream.

Grate a milk chocolate on top. Let the cake cool for 12 hours. I used a white / black milk chocolate.


Walnut and nes cake

  • a sachet of baking powder
  • a pinch of salt
  • 200 gr unsalted butter
  • 150 gr powdered sugar
  • 2 yolks
  • 2 teaspoons nes
  • 150 gr powdered sugar
  • 1 tablespoon cocoa
  • 1 tablespoon cappuccino
  • 2 tablespoons oil
  • 3 tablespoons hot water

Mix the egg whites with a pinch of salt. Add the sugar and mix for a few more minutes. Mix the yolks with the baking powder and pour over the beaten egg whites. At the end, incorporate flour and walnut with light movements, using a spatula. Pour the composition into a tray of the right size, lined with baking paper and place in the preheated oven at 175 degrees for about 25-30 minutes.
Remove from the oven, leave to cool, then soak the top on a plate.

For the cream: mix the butter well with the sugar. Add the nes powder and mix for a few more minutes. Then add the 2 yolks in a row, mixing until smooth.
Place with a tablespoon of cream on the counter and level with a knife with a wide blade. Refrigerate until the cream hardens well.

For the icing: mix the powdered sugar with cocoa and cappuccino powder, then add the two tablespoons of oil and gradually hot water. Mix well with a spoon until the sugar melts.
Pour the icing over the hardened cream and level. Grate the white chocolate on top.
Keep the cake in the fridge until the icing hardens, then slice with a knife passed through hot water.

The cake sheets are easy to prepare, mix all the ingredients, knead a dough, and bake the sheets on the back of the tray. You don't have to worry about countertops, foaming. you don't have to worry about the cream cutting either. Sheets with coconut and chocolate cream is a simple recipe. I did it right at Christmas and it turned out well.

Each sheet is placed on the bottom of the tray greased with oil and sprinkled with flour. Bake for a few minutes until cooked through.

The commercial chocolate cream is prepared according to the instructions on the envelope. Put the cold milk in a bowl, open the sachet and pour the cream powder over the milk. Mix for a few minutes with the mixer until the cream hardens.

You do not need sugar, because the cream will be sweetened from the spreadable cream.
In a bowl, heat the water until it boils. Place the box of spreadable cream in the bowl. Make sure that the water does not exceed the edge of the spreadable cream box, so that the water does not enter the cream. Gently mix the cream in the box with a spoon and you will see that the cream softens. So you can pour the soaked cream into the chocolate cream prepared beforehand.
