This dessert sandwich is perfect for people of all ages

If you can’t decide between grilled cheese, peanut butter and jelly, and dessert — why not have all three?

Ingredients

For the Cheddar Ice Cream:

  • 1 Cup sugar
  • 1/4 Teaspoon salt
  • 7 large egg yolks
  • 1 1/2 Cup half and half
  • 6 Ounces shredded sharp Cheddar cheese, preferably Tillamook
  • 1 Cup heavy cream
  • 1 Tablespoon vanilla extract

For the sandwiches:

  • 4 Teaspoons salted butter, preferably Tillamook
  • 16 slices pain de mie sandwich bread (or use brioche, challah, or other rich white breads)
  • 8 Tablespoons high quality cherry jam (you can use strawberry or any other flavor you prefer)
  • 8 Tablespoons creamy peanut butter
  • 8 1/2-inch slices of Cheddar ice cream (see recipe)

Italian Grana Padano cheese gives a delicate, creamy flavour to this ice cream, which is delicious paired with grilled peaches and drizzled with a rich toffee date sauce.

Grana Padano&rsquos delicate flavour is key to this recipe. Made with partially skimmed milk in the Po River Valley in northern Italy, it is aged long and slow (from nine to over 24 months) to give it its slightly nutty flavour &ndash making it the perfect accompaniment to sweet peaches drizzled with honey.

  • 100 g Grana Padano
  • 30 dates, roughly chopped
  • 2 tbsp. good-quality vanilla paste
  • 4 ripe peaches
  • 2 tbsp. honey
  • 50 g hazelnuts (and a few extra to serve)
  • 10 g butter
  • Good-quality salt

DIRECTIONS

  1. In a saucepan, bring the cream, Grana Padano, half the chopped dates and the vanilla paste to a steady simmer, while stirring continuously.
  2. Allow to cool, then put the mixture into an ice-cream maker and chill to the device instructions (approx. 25 minutes).
  3. Slice the peaches in half, drizzle with honey and place face down in a frying pan. Cook on a medium heat for 10 minutes, moving them to prevent burning.
  4. Take the peaches out of the pan. Add the hazelnuts to the pan and toast in the honey for 2 minutes, until brown. Remove and roughly chop for serving.
  5. Place the remaining dates into a microwavable container with 3 tbsp. of boiling water and cook on high for 3 minutes. Remove from the microwave, add the butter and a pinch of salt, then stir to create a sauce.
  6. To serve, plate the roasted peaches, add a couple of scoops of the ice cream, drizzle over the sauce and scatter with the hazelnuts.
