Meatballs:


Peel a squash, grate it and boil it. We take it out to cool when it is ready, then we put it on the small grater. We wash the dill and green parsley and chop it finely. In a bowl put the meat, grated potato, dill and green parsley, bread soaked in water and well squeezed. Peel the garlic, grind it and put it in the above composition. At the end we add the egg, salt and pepper to taste. We put a pan on the heat, I used a pan in which I baked them without oil, but you can fry them in oil. When it has become hot, form small meatballs and bake them on both sides. When they are ready, we take them out on a plate.

Sauce:

We clean the kapia pepper, the donut from the seeds and make small squares. We clean the onion and finely chop it. Peel a squash, grate it and slice it. Peel a squash, grate it and cut it into cubes. Heat the oil in a saucepan. Put onions and tomatoes, 3-4 tablespoons of water and simmer a little. Then add the carrot, pepper and donut. Cover with 1 cup full of water, bring to a boil over medium heat and cover with a lid (if needed along the way, add a little warm water).

When the vegetables are well penetrated and the sauce is bound, season with salt, pepper, basil, and finally add the donut paste. Put the meatballs, boil for about 2 minutes and remove the pan from the heat. Leave to cool and serve.

Meatballs with rice in tomato and vegetable sauce!

Prepare these rice buns in tomato and vegetable sauce - your family will definitely love this dish. It goes perfectly with rice, pasta or mashed potatoes.

INGREDIENT:

-500 gr of minced meat (beef and pork)

-1½ glass of boiled rice al-dente (1 glass = 250 ml)

-1 tablespoon topped with tomato paste

-salt and black pepper - to taste

-flour and oil - for frying.

METHOD OF PREPARATION:

1.Cut the onion into small cubes, chop the garlic, pass the carrot through a small grater.

2.Mix the minced meat with rice, 1 onion, garlic, egg, salt and black pepper.

3. Take a little composition, shape the meatballs, pass them through the flour and place them on the shredder.

Advice. If the chop sticks to your hands, you can soak them in cold water.

4. Transfer the meatballs to the pan with hot oil and fry over high heat until golden brown on both sides.

5.Prepare the sauce. Saute onion and carrot on oiled skillet.

6.Add the tomato paste, mix and pour water.

7.After the sauce boils, add bay leaves, black pepper, salt, paprika, greens and sugar.

8.Mix the sauce and simmer for about 5 minutes.

9. Pour the sauce into the meatballs and boil them under the lid and over medium to low heat for about 30 minutes.


Pumpkin meatballs in tomato sauce

Peel a squash, grate it and sprinkle with salt, then place in a colander and set aside for 10 minutes.

Finely chop the onion, cut the ham into cubes, chop the parsley, grind the garlic.

Match with spices to taste, chopped basil leaves and simmer over medium heat, add the meatballs, crushed garlic and leave for another 6 minutes on the fire.


Ingredients tomato sauce for meatballs

For a tasty sauce we must use very ripe tomatoes and a quantity of 2-3 kg, because a lot will be lost by removing the skin and the white parts from the back of the tomato.

5 tablespoons vegetable oil (not olive oil)

3 tablespoons flour (to thicken the sauce when used with meatballs, and for spaghetti will give up the flour)

500 g vegetable soup (meat soup or tomato juice)

1 teaspoon caster sugar or honey (to cut the acidity of tomatoes)

a few celery leaves (basil, marjoram, dried oregano or bay leaves to taste)

For today I prepared a lunch full of vitamins, a reinterpretation of the tomato sauce with meatballs from the Transylvania area, which I did not love at all in my childhood, Meatballs with vegetable sauce and caramelized onions. As you will see below, it is a nutritious food full of healthy elements, which finally give a delicious dish.

1/2 can of skinless tomatoes (organic)

1 kg minced pork + beef

For caramelized onions:

Meatballs: I put the minced meat in a bowl and I added eggs, minced garlic, breadcrumbs, coriander and spices and I mixed everything well, then I formed with my hand and with the help of a fork, meatballs, on which I flattened to fry evenly.

I put them in a pan with a little oil, over a moderate heat and I fried them until they were nicely browned on both sides.

Vegetable sauce: I put salt water in a pot, then I cleaned the celery and the carrot, I washed them well and then when the water started to boil I added them there, after they softened a little I added the bouquets of broccoli and towards the end leeks, fennel and potatoes, all cut into cubes.

I let the vegetables boil well, then I drained them and put them in the blender, adding a little of the water in which they boiled and half a can of tomatoes peeled.

I continued to mix all the vegetables in a blender until they were nicely mashed and turned into a delicious sauce. I then put the sauce in a saucepan, I put it on the fire to give 2-3 boils to blend harmoniously all the flavors and at the end I added the spices and butter.

Onions: I cleaned and washed the onions, then cut them into scales and put them in a hot pan with a little oil where I let them fry nicely over high heat for a start, then over low heat.

I added a little salt and finally a handful of sugar to caramelize them.

I served the vegetable sauce with meatballs and caramelized onions with a delicious salad of greens & tomatoes, cucumber, baby spinach and leurda .. a wonder ..

The vegetables are cleaned and washed.

Put the potatoes and carrots on a small grater and drain well, pores & acircndu I & icircn m & acircini. The rest of the vegetables are put on the grater and mixed, in a bowl, with the carrots and potatoes. Over the vegetables add the flour, breadcrumbs, parsley, finely chopped, crushed garlic, salt and spices. Homogenize the composition well and let it rest for 10 minutes in the refrigerator.

Then, shape the meatballs, flatten them lightly and fry them in hot oil, or put them in the oven at 180 degrees, until they brown.

Chickpea or Falafel Meatball Recipe - Ingredients:

  • 250 g chickpeas
  • 1 medium onion
  • 4 cloves of garlic
  • 2 parsley bindings
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • a little pepper
  • 1-2 tablespoons flour
  • 1 teaspoon baking soda

The chickpeas are left to hydrate in cold water overnight.

  • 60 g finely ground walnuts

Ingredient:

  • 400 gr rice, 1 potato
  • 200 gr mixed vegetables (peppers, carrots, etc.)
  • 1 teaspoon grated ginger, 1/2 teaspoon ground cumin
  • 1 tablespoon cornstarch, salt and pepper (to taste)
  • Sunflower oil (for frying)

Method of preparation:

Boil the rice in salted water. Wash the vegetables, clean them and fry them (apart from the potato) in a pan with a little oil, then put them in a bowl. Peel a squash, grate it and add it to the bowl.

Add the boiled rice to the vegetable bowl. Add grated ginger, cumin, cornstarch, salt and ground black pepper. Mix all the ingredients in a blender.

We must be careful not to mix too much, because the rice and vegetable dough should not be very soft.

We wet our hands and form meatballs from the mixture of vegetables and rice.

Heat sunflower oil in a pan, then add the meatballs. Fry the meatballs on both sides until well browned. Then take them out of the pan and put them on a paper towel, so that the excess oil is absorbed.

Let the meatballs cool a bit, then serve. Have fun with your loved ones and increase your cooking!

Meatballs with rice

Ingredient:

  • 500 g minced meat
  • 1/2 tablespoon rice
  • salt
  • 1 onion
  • black pepper

Method of preparation:

1. Cut the onion as small as possible. Boil the rice halfway and mix it with onion and minced meat. Season everything with salt and pepper.

2. Mix everything until you get a homogeneous paste. Form the meatballs and place them in a deep pan. Add as much cream and water as needed to completely cover the meatballs.

3. Simmer for 30 minutes.
