And of course with great care not to end up with burns of varying degrees on our hands so we use as many kitchen towels as we need.
If we manage to turn the food over without accidents, we do not hurry to raise the pan because until the total completion we risk the meat to cool down. So we leave the food turned over and covered with the pan and we take care of the final appearance. Garnish the edges of the plate around the pan with salad and yogurt as nicely as possible. I used lettuce, grated carrot and red cabbage rubbed beforehand with a tablespoon of vinegar.
