Homemade biscuits with coffee

Soft butter, a pinch of salt and sugar mix with a whisk until frothy. Add two tablespoons of nutella, coffee, cocoa. Mix a little, then add the baking soda and the two tablespoons of milk. Incorporate, then add the flour and mix enough to homogenize the composition. Depending on the type of flour, it may be necessary to add another 20 gr, it is important to make a compact dough, but malleable, not very hard. Add the chocolate chips and knead lightly by hand. Leave the dough to cool for 20 minutes.

Turn the oven to 160 degrees. Prepare a baking tray with parchment paper.

Remove the dough from the cold, spread it in a layer of 1.5 cm. Cut out the right discs (depending on your choice), then place them in the baking tray. It is stamped with the supplied stamp or it is pricked with a fork, depending on the tool you have. If you don't want to stamp them anymore, spread the thinner layer of dough.

Bake in the preheated oven at 160 degrees for 10-15 minutes. Remove and leave to cool in the pan, then transfer to a kitchen grill.

If you like the more intense taste of coffee, you can supplement the amount.

From the amount of sugar used, the biscuits come out quite sweet, thanks to the nutella cream. If you want to give it up, you may want to supplement the amount of sugar with another 20-30 gr, depending on the taste of each. I don't like sweets very much.

These homemade cookies are very easy to make. The ingredients used are somewhat healthy. Try to give up as much as possible white, refined flour, and white sugar, which cause many disorders in the body.

• 250 g of rye flour
• 125 g of melted margarine
• 70 g of raw sugar
• 50 ml of coffee
• 10 g of vanilla sugar
• 5 g of baking powder

• ¼ teaspoon of cinnamon
• 1 knife tip of ground nutmeg
• 1 knife tip of ground cloves
• 1 knife point of ground anise
• 1 knife tip of ground ginger
• grated orange peel
• 1 pinch of salt

Put the flour in a large bowl. Add the baking powder and mix. Add salt, raw sugar and brown sugar and spices. Melt the margarine on the bain-marie, and after it has cooled, add it to the bowl. Then add the coffee (prepared by the filter or by the traditional method).

Mix everything with a wooden spoon at the beginning, then start kneading the dough with clean hands, until you get a homogeneous and non-sticky crust.

Shape the dough into a thick salami, and wrap it in food-grade plastic wrap. Let it sit in the fridge for an hour, an hour and a half.

Then remove the foil and divide the dough in half. Spread each ball of dough on the table with the rolling pin, in a suitable thick sheet. You can use a special shape to cut the cookies. If you have nothing in the house, use the mouth of a glass or a small jar. You can prick the biscuits with a toothpick to give them a more authentic look.

Line the large baking tray with baking paper and place the biscuits in it. Turn on the oven and let it heat up well. Bake the biscuits for about 10-15 minutes, at 180 degrees.

They have a brown color, very beautiful, and are extremely fragrant. If you like coffee, you can use more coffee in the composition.

Morning coffee is better if you serve it with an aromatic biscuit. Pastry chef Ana Consulea gave us a very simple recipe, to try on the weekend and then enjoy every day.

Ingredients for about 700g of biscuits:

  • 250g butter
  • 50g yolk (from two eggs)
  • 140g old powder
  • 2g salt
  • 15g milk
  • 1 vanilla bean
  • 400g flour
  • 10g baking powder

Method of preparation:
Butter, yolks, powdered sugar, salt, vanilla milk are mixed in a mixer until smooth.

Add flour, baking powder and refrigerate for 30 minutes. Remove, stretch and cut the desired shape. Bake at 180 degrees for 12 minutes.

It can be made with ness instead of vanilla, about 5 g of ness and 2 teaspoons of water or cinnamon.

Beat the egg whites with a pinch of salt. Add 50 g of sugar and continue mixing until a meringue is obtained. Add the ness, the almond essence and at the end, incorporate with a spatula the sifted almond flour together with the rest of the powdered sugar.

Transfer the composition to a bag and form even lumps on the silicone board or on the tray lined with baking paper. For the cracked look, I let them rest for 30 minutes.
