Pesto Tofu Scramble

Step 1

In a food processor, combine basil, cashews, nutritional yeast, garlic, lemon juice, spinach, and ¼ teaspoon salt. Process, adding water as needed, to get a thick pesto.

Step 2

In a large pan, add olive oil over medium-heat. Stir in mushrooms and ¼ teaspoon salt. Sauté until mushrooms begin to brown and release moisture. Add cherry tomatoes and cook for 2 minutes.

Step 3

Stir in tofu, cooking just until heated through. Remove from heat, mix in pesto just before serving, and divide between two plates.

It’s been nearly five months since R and I returned to Brooklyn from a three year stint in Boston. Though the southerner in me is thrilled to have escaped before Boston’s winter, I do miss New England summers and easy escapes to the idyllic surroundings of the Cape, Maine and Vermont. This Labor Day weekend, we trekked to Hyannis and boarded the ferry to Nantucket for four wonderful days. The biggest question on our mind – how to maximize the number of possible visits to Black Eyed Susan’s short of eating every meal there? There are a number of veg-friendly restaurants on the island, but BES will replace any protein on the dinner menu with tofu (which leads to some creative entrees) and will substitute tofu for eggs on the brunch menu.

This weekend, we’re enjoying a lazy weekend at home. I played sous chef while R recreated some BES goodness for brunch with a tofu and cilantro chili pesto scramble.

Grocery :
1 package extra firm tofu
1 red bellpepper. diced
Handful of mushrooms, sliced
10-12 cherry tomatoes, sliced in half
1/2 bunch of chopped mustard greens
2-3 cloves of garlic
2 tofurkey sausages (optional), sliced into circles
Cilantro chili pesto sauce

5-7 minutes then add cherry tomatoes. Add tofu to the veggie mixture. Stir in 3-4 tablespoons of pesto sauce and salt to taste. Garnish with cilantro. You can substitute any combination of veggies with this dish and leave out the tofurkey sausages if fake meat grossed you out. This is a great dish to make when you are trying to use up fresh veggies before they go bad.


Easy Pesto Scrambled Tofu

One of my favourite speedy meals – both for breakfast AND for dinner – is Scrambled Tofu!

If you’ve never tried it before, you’re in for a real treat. It’s quick and easy to make, kid-approved (I can vouch for this!), packed with protein – plus, it tastes super creamy and delicious!

When Sacla (the pesto pioneers) challenged me to come up with a Veganuary recipe over on Instagram (this blog post is not sponsored) using their vegan pesto, I decided to give this classic recipe a bit of a twist. In fact, it was SO good that I had to share on here, too!

This Pesto Scrambled Tofu is the perfect breakfast, brunch or dinner to enjoy this Veganuary.

Healthy, high protein and delicious, it makes the perfect substitute for scrambled eggs on toast. Plus, the addition of pesto helps to take it to the next level!

You can serve this Scramble with whatever you fancy, but I love mine with buttery sourdough toast, blistered tomatoes (soooo juicy and mouth-watering!) and avocado slices.

Easy Pesto Scrambled Tofu

Ingredients:

  • Serves 2 –
  • 200g block firm tofu (I used Tofoo Co), drained
  • Olive oil or knob non-dairy butter
  • 1 clove minced garlic
  • 2-3 tbsp vegan pesto (I used Sacla)
  • 1 tbsp Nutritional Yeast
  • 1/2 tsp chilli flakes (optional)
  • Handful cherry tomatoes, diced
  • Handful fresh basil, finely chopped
  • Salt and pepper, to taste
  • To serve: Fresh lemon juice, a sprinkling of seeds, avocado slices, sourdough toast and blistered tomatoes (I simply heated tomatoes on the vine in a non-stick pan on a high heat until they blistered)
  • Optional: For a slightly creamier scramble, feel free to whisk in a small splash of vegan milk (eg oat or cashew – you want a neutral taste) as you cook the tofu. You can also add a pinch of Kala Namak to taste (if you have it!) for an eggier taste.
  1. Heat your oil or butter in a pan until hot.
  2. Crumble your tofu into the bowl so that it looks like “scrambled eggs” (I break mine into small chunks), then toss in 2 tbsp pesto, garlic, chilli flakes if using and Nutritional Yeast to coat, adding a sprinkling of salt and black pepper (I use about 1/4 tsp of salt) to taste.
  3. Mix well to combine, then tip into the hot oil in the frying pan on a medium to low heat, stirring often. If you are using the milk, whisk it in now – if not, ignore this step!
  4. Continue to cook, stirring often, until prepared to your desired texture – I fry mine for 7-10 minutes, or until piping hot and beginning to brown. Stir through diced tomatoes and basil until warmed, and add the extra pesto if desired.
  5. Serve scramble on top of sourdough toast, with avocado slices and blistered tomatoes on the side.

Pesto Tofu Scramble (or What To Do With Leftover Pesto)

I don’t think this post needs too much explanation. I started making tofu scrambles with leftover pesto because there is always leftover pesto. Sometimes I freeze it in ice cube trays and, once frozen, pop them into a freezer bag making for an easy pesto pasta lunch. Or, I just scramble up the tofu and mix in the pesto. A delicious and quick breakfast/lunch/brunch idea.

I am not posting exact measurements because this is more of a method than a recipe, so use your judgement. A 14oz. box of tofu will make enough tofu scramble for about 4 adults. I love to add turmeric both for color and the healthful benefits. Finally, a few spoonfuls of pesto will make it very flavorful!

Extra firm tofu
Onion
Turmeric
Pesto
Olive oil
Salt

Press the tofu for only about 10 minutes, just long enough to get the major amounts of water out.

Dice up the onion and sauté in olive oil and a pinch of salt until translucent. Add a few dashes of turmeric and stir around to coat.

Crumble the tofu into the pan with the onions and stir to coat. Mix in a few spoonfuls of pesto and heat through.

  • 5 ounces oyster mushrooms, thickly sliced
  • Salt and freshly ground pepper
  • 1 pound firm tofu&mdashdrained, patted dry and cut into 1/2-inch cubes
  • One 12-ounce jar roasted red bell peppers, drained and thinly sliced
  • 3 ounces mozzarella-style soy cheese, coarsely shredded (1/2 cup)
  • 2 tablespoons prepared pesto

Bring a medium saucepan of water to a boil. Add the potatoes and cook over moderately high heat until tender, about 10 minutes. Drain and slice the potatoes crosswise 3/4 inch thick.

In a large nonstick skillet, heat the oil until shimmering. Add the potato slices and cook over moderately high heat, turning occasionally, until lightly browned, about 5 minutes. Add the mushrooms, season with salt and pepper and cook, stirring occasionally, until browned, about 6 minutes. Add the tofu and roasted red peppers and season lightly with salt and pepper. Cook, stirring and lightly mashing the tofu, until the ingredients are combined and heated through, about 5 minutes. Add the soy cheese and 1 tablespoon of the pesto and stir to melt the cheese. Transfer the scramble to a platter and drizzle with the remaining 1 tablespoon of pesto and serve.

A taste of Italy! This recipe was developed using pesto paste that comes in a tube and happens to be vegan. It’s a great ingredient to keep on hand, because it stays fresh in the fridge for a long time.

Ingredients

  • 8 oz. thinly sliced cremini mushrooms (2 cups)
  • 1 12-oz. pkg. extra-firm tofu, drained and broken into bite-size pieces
  • 1/4 tsp. ground turmeric
  • 1 medium tomato, roughly chopped (1 cup)
  • 2 Tbs. pesto paste, such as Amore

Preparation

1. Coat large skillet with cooking spray, and heat over medium-high heat. Sauté mushrooms in skillet 5 minutes, or until browned. Transfer to plate. Wipe out pan, and coat with cooking spray.

2. Add tofu to pan, and scramble 10 minutes, or until lightly browned. Sprinkle in turmeric, and add chopped tomato and pesto. Season with salt and pepper, if desired, and cook 3 minutes, or until scramble is heated through.

  • ¼ tsp smoked paprika
  • ¼ tsp ground cumin
  • ¼ tsp ground turmeric
  • ½ tsp garlic powder olive oil, for frying
  • 1 spring onion, finely sliced
  • 150 g extra-firm tofu, drained
  • 5 cherry tomatoes
  • ¼ avocado, diced
  • Pinch of freshly ground
  • Black pepper
  • 1 slice of rye bread, toasted

Method

  1. To prepare the seasoning: in a small bowl, mix together the paprika, cumin, turmeric and garlic powder.
  2. Heat a little olive oil in a small, non-stick frying pan over medium heat. Add the spring onion and cook for 1 minute, or until softened.
  3. Using your fingers, break the tofu into small pieces and crumble into the pan. Sprinkle the seasoning over the tofu and mix well.
  4. Add the cherry tomatoes and avocado to the spiced tofu mixture and cook, stirring occasionally, for 5 minutes, or until the tomatoes begin to burst. Add a sprinkle of pepper and stir for another 2 minutes.
  5. Serve the scrambled tofu with the toasted rye and your morning coffee, if you like!

4 EASY-TO-MAKE VEGAN TOFU RECIPES

1. Tofu and avo sandwich

Tofu is a brilliant sarnie filler. The slow-releasing energy of the rye bread plus the healthy fats from the avocado make for a fuller-for-longer feast.

INGREDIENTS

  • 200g firm tofu, sliced
  • 1 tbsp dried mixed herbs
  • 2 slices of rye bread
  • 1 tomato, sliced
  • ½ avocado, sliced
  • handful of rocket
  • salt and pepper
  • 100g almonds
  • 100ml olive oil
  • 3 garlic cloves
  • 25g basil
  • 1 tsp lemon juice
  • 1 tbsp maple syrup &bull salt

1. Preheat the oven to 170°. Press the tofu slices between some kitchen roll and pop something heavy on top for 20 mins to press out any excess liquid.

2. Once the tofu&rsquos dry, sprinkle it with the herbs and bake in the oven for 30 mins, then remove and leave to cool.

3. Meanwhile, make your pesto by blitzing all the ingredients in a food processor until smooth. Add a splash of water if it looks dry. It will make enough for six servings &ndash keep it in the fridge for up to three days or freeze it in portions.

4. Toast the bread and get assembling. Spread with pesto, layer with the tofu, tomato, avocado and rocket, then season with salt and pepper &ndash et voila &ndash lunch, served.

The go-to easy-win dinner has had a wholesome makeover. This dish-with-a-kick is high in fibre, which is vital for a healthy bowel and gut.

INGREDIENTS

  • 150g brown rice
  • 40g baby corn
  • 300g firm tofu
  • 1 tbsp olive oil
  • 100g mushrooms, chopped
  • 1 courgette, chopped
  • 1 red chilli, chopped
  • 30g bean sprouts
  • 30g coriander, chopped
  • 40g roasted cashew nuts (optional)

1. Brown rice takes a while to cook so get this simmering on the hob first. It should take 40-45 mins &ndash throw in your baby corn for the last minute or two.

2. Next, drain the tofu and squeeze out any excess liquid by placing under a heavy object as before. Meanwhile, start prepping your vegetables.

3. Warm the oil in a frying pan over a medium heat. When the tofu is good to go, cut it into small pieces and sauté with the mushrooms and courgette for 10-15 mins, stirring.

4. While you&rsquore waiting for the rice to cook, make the dressing by combining all the ingredients and mixing well.

5. When the rice and corn are ready, drain and add them to the tofu, mushroom and courgette mix. Then chuck in the red chilli, bean sprouts and coriander.

6. Plate up and spoon some of the dressing over the top. If you want to give it a bit more oomph, garnish with some more sliced chilli and a handful of roasted cashews. Chopsticks at the ready.

3. Tofu scramble

How do you like your tofu in the morning doesn&rsquot have quite the same ring to it, but swap your egg scramble for this version and get a hit of B12 &ndash elusive on vegan diet. Plus, it's one of the easiest vegan tofu recipes to make.

INGREDIENTS

  • 100g baby potatoes, thinly sliced
  • 1 tbsp olive oil
  • 1 garlic clove, chopped
  • 6 spring onions, chopped
  • 1 red pepper, chopped
  • 100g mushrooms, sliced
  • 1 tbsp nutritional yeast
  • salt and pepper
  • 1 tbsp tamari
  • 1 tbsp ground turmeric
  • juice of ½ a lemon
  • 400g silken tofu
  • 4 slices of rye bread
  • 1 avocado, cubed

1. Place the potatoes in a pan of salted water, boil for 3 mins, then drain.

2. Heat the oil in a frying pan and add the potatoes and garlic. Stir over a medium heat for about 5 mins, then add the spring onions, red pepper and mushrooms.

3. Cook for another minute or so, then add the nutritional yeast, salt and pepper, tamari, turmeric and lemon juice.

4. Now it&rsquos tofu time. Crumble it into the pan and cook for a few mins while stirring.

5. Toast the rye bread, then plate up, topping it with the scramble and the avocado. Scoff it like you mean it.

4. Cacao and matcha cake

Icing. Made from tofu. Stay with us. While we don&rsquot suggest smashing through it in one go, swapping the butter and sugar for yoghurt and tofu makes for a healthier upgrade.

  • 300g ground almonds
  • 40g cacao powder
  • 1 tbsp bicarbonate of soda
  • 200g buckwheat flour
  • pinch of sea salt

  • the water from 1 can of chickpeas (hold the chickpeas)
  • 500g coconut yoghurt
  • 700g silken tofu
  • 6 tbsp maple syrup
  • 1 tbsp matcha powder

1. Preheat the oven to 180°. In a large bowl, mix together the ground almonds, cacao powder, bicarbonate of soda, buckwheat flour and salt &ndash give it a really good mix to get rid of any lumps.

2. Once combined, add the maple syrup, almond milk and chickpea water. Mix well until it resembles a smooth batter.

3. Grease two cake tins, divide the batter between them and bake for 20 mins. Then remove from the oven and set aside to cool.

4. Now, the star of the show: tofu icing. Place the coconut yoghurt in a large mixing bowl and whisk until thick. You can use an electric whisk &ndash but use a manual one and you&rsquoll give your arms a workout, too. Bonus. Once thick, add the rest of the ingredients and whisk until smooth.

5. When the cakes have cooled, spoon half the icing on to one of them and top with the second cake. Then spread the rest of the icing over the top and smooth it over. Sprinkle with some matcha powder for an extra dash of wellness.
