Roll with jam and chocolate icing

Ouale is separated. Mix the yolks with the sugar and essence, then pour over the beaten egg whites. Mix until the sugar melts, then add the flour, baking powder and cocoa.

Pour the composition into a large tray (35 X 42) lined with baking paper and bake for about 15 minutes, trying with a toothpick. Carefully take it out of the tray and place it on a damp towel so that the baking paper remains on top, peeling it carefully so that the worktop does not break. While it is hot, spread the jam and, with the help of the wet towel, roll the top lengthwise.

Spread the icing with a spatula and put in the fridge or even a few minutes in the freezer. When the icing hardened a little, the colored ornament was placed.
