Praline with candied mango and allspice

Coffee-flavored chocolate together with milk chocolate, break the pieces and put them in a bowl in a bain-marie to which is added 1 teaspoon of olive oil, taking care that the water that boils in the meantime, does not touch the bowl.

The original recipe requires 30 grams of butter per 300 grams of melted chocolate, but I opted for oil to give shine. However, butter is an optional ingredient. Stir continuously with a silicone spatula until the chocolate melts, and then according to the instructions, I put it in the freezer for a few minutes, then back on the steam until it melts again. Until the chocolate stays in the freezer, prepare the ganache as follows: the white chocolate breaks into pieces and melts in a bain-marie. Add the whipped cream and mix until the chocolate melts.

Candied mangoes are left in the liqueur until all of the above is prepared. Then drain the liqueur, throw in the chocolate and mix until perfectly blended. You can also keep the liqueur if you like. I found mangoes candied for the holidays and I have already used it in two rounds of panettone, for cereals and now for pralines and I still have. Luckily it only expires in May, until then I will find some utility for sure. Prepare the forms and put in each square or heart, a powder of allspice, obtained by grinding whole grains with a grinder. Pour into the form first the dark chocolate or the one with milk depending on what you choose, then a teaspoon of ganache and finally cover it again with dark chocolate and put it in the freezer again for 15 minutes.

While filling the forms, keep the chocolate on steam so that it does not harden until the filling procedure is completed. Take it out of the freezer, take it out of the molds and put it in special papers for pralines.

For the dough, mix all the ingredients in a food processor, put the dough in a foil and cool it for half an hour.

Roll out the dough and cut out 24 discs. Line 12 baking trays with half of the cut discs, fill them with the fruit mixture and cover with the rest of the dough. Bake for 20 minutes or until dough it turns golden. Powder with sugar after cooling.

  • 1.5-2 kg of salmon

  • 100 g parsley
  • 100 g tarhon
  • 50 g bread crumbs (larger grain breadcrumbs)

Method of preparation

Using tweezers, clean salmon of bones. Wash the lemons, peel them and cut them into small pieces. Squeeze the juice from a lemon.

Soak the gelatin in cold water. Put in a blender ¾ of the amount of liver and liquid in the wok, less thyme and rosemary, and mix finely.

Add the gelatin, a powder of the spices listed, the orange peel. Incorporate the preserved pieces of liver. Put the composition in a tray lined with foil and leave to cool for at least three hours.

With a sweet aroma, but a spicy taste, called by the Chinese pepper with a hundred flavors, allspice is a special spice, which deserves a place of honor on our shelf of spices. It can accompany steaks, rice, desserts, South American dishes, it can turn a baked chicken into something special and exotic.

Pancakes with goat cheese, turmeric and raspberry sauce with vanilla and allspice

1 vanilla pod of Fuchs

3 tablespoons raw cane sugar

Remove the seeds from the vanilla pod. Chop the allspice seeds. Wash the limes, dry them and grate the peel. Use half for the pancake batter and half for the raspberry sauce.

Squeeze the orange and lime. Pass the juice, half the lime peel, 3 tablespoons raw sugar and 350g raspberries.

Separate the eggs. In a bowl, mix the egg yolks with the goat cheese, vanilla seeds, chopped allspice, turmeric, lime peel and starch. Whisk the egg whites with a pinch of salt. Gradually add the powdered sugar and mix. Pour the composition over the yolk mixture and mix gently.

Put the butter and ginger in the hot pan (not all at once, but gradually). Bake 12 small pancakes for about 4 minutes each over medium heat until golden brown.

Place a portion of three pancakes on the plate, garnish with fresh raspberries, powder them with powdered sugar and serve with raspberry sauce and mint leaves.

Recommendation: If you do not have fresh raspberries, you can use frozen fruit. Instead of raspberries, a mango or apricot sauce is just as delicious

There are no fixed rules on this aspect but it would be good to have at least 3 varieties of cheese. The upper limit is not set and depends on the budget of each host as well as her passion for cheese. Generally you put about 6-7 kinds of cheese but it is not wrong to put 10 or 12. If the plate is offered as a dessert and ends a meal then the amount of cheese would be approx. 50 g / person respectively 300 g for 6 people. If the plate is the only way presented, then we go with 170-200 g of cheese / person and 1.2 kg of cheese for 6 people. Do not skimp and better put more on the plate because you can recover and refrigerate what is left. I would take approx. 1.5 kg of cheese for 6 people. It is not wrong to put raw-dried sausages on the plate (ham, sausages, salamis & # 8211 all extra thin slices & # 8211 but I preferred to go strictly with cheese and fruit.

A refreshing and fragrant dessert, which you can easily prepare.

Preparation time: 30 min, plus freezing time in the freezer

Ingredients for 10 servings:

  • 500 g fresh
  • 3 unseparated eggs
  • 300 g raspberries, lightly crushed
  • 50 ml of raspberry or strawberry liqueur
  • 150 g sugar cough
  • 100 ml of milk
  • 1 packet of vanilla sugar

2. When the mixture has cooled, add the liqueur, vanilla sugar, raspberries and whipped cream. Mix with a spatula until smooth.

3. Put this composition in a special rectangular shape for freezing and put in the freezer. Hold for 5-6 hours.

4. Melt the chocolate in a bain-marie, then make various figurines for decoration. Remove the perfume from the freezer, then out of the mold. Place on a plate. Put the whipped cream for garnish in a cone provided with spirit and decorate the perfume. Place the chocolate figurines and fruits on top.
