Care sunt secretele ficățeilor de pui fragezi și suculenți?

Regula de bază: ficatul NU se sărează înainte de gătire! Sarea scoate apa din țesuturi și le întărește. A doua regulă: ficatul NU se gătește mult! Fie că vorbim despre ficat de vițel sau porc ori despre ficățeii de pui, nu trebuie să exagerăm cu prăjirea lor. Trebuie însă să ținem cont de temperaturile de siguranță corespunzătoare fiecărui tip de carne și care, în cazul ficatului de pui, sunt în jurul a 70 C (temperatura la care se distruge salmonella). Deci nu nenorocim ficățeii și nu-i facem scrum pe grătar sau în tigaie. Este foarte ușor să ruinezi un preparat cu ficat prin gătire exagerată. El va deveni tare, sfărâmicios (înecăcios) și amar.

Pentru un gust plăcut ficățeii de pui se pot marina rapid cu un ulei aromatizat cu piper, usturoi sau ierburi aromatice (fără sare!). Baconul în care i-am învelit a fost unul ușor afumat dar puteți alege și versiuni crud-uscate neafumate. Pentru un plus de savoare am introdus și bucățele de ceapă verde în interiorul acestor mini rulade.

Din cantitățile de mai jos rezultă 2 frigărui cu ficăței de pui înveliți în bacon. Pe fiecare băț am pus câte 4 bucăți dar ne-am săturat bine de tot cu câte o frigăruie/persoană și ne-a rămas și pentru cină. Puteți multiplica oricând rețeta în funcție de numărul de persoane prezente la masă.

Și știu sigur că sunt destui oameni în aceeași situație, așa că trag concluzia că lucrurile sunt simple cu ficatul – ori îți place, ori îl detești.

ALTE REȚETE CU FICĂȚEI DE PUI
