But I remember with pleasure that my mother sometimes made apples in her pajamas. They had a very nice name, and for me as a child it sounded attractive.

Now, later, I found out that the Spaniards in the Murcia area also have something like this, very interesting, in their kitchen. They make lemon leaf breadcrumbs, and call them: & # 8220Paparajotes & # 8221.

So, in the following, I will present these recipes.

Pick a few large, healthy lemon leaves, wash and wipe with a paper towel.
The same is done with acacia inflorescences.
2 apples are washed and cut transversely into 0.5 cm rounds.

Prepare a thicker pancake batter:
1 or
1 cup of mineral water or soda
1 cup of milk
250 gr flour
6 lg sugar
2 sachets of vanilla sugar

Mix all ingredients together.
Pass the flowers, leaves and apples through the dough one by one and fry them in hot oil. Remove to a tray covered with a paper towel to absorb the oil.

Acacia flowers and lemon leaves are powdered with vanilla sugar and apples with cinnamon.


1. Recipes - Pancakes with acacia flowers

The following ingredients are used: 20 acacia flowers, 400 ml milk, 200 g white flour, 2 tablespoons sugar, 2 eggs, 150 ml mineral water, a little vanilla essence, a pinch of salt.

It is prepared as follows:

  • Beat the eggs with a whisk, mix with the sugar and then add a little salt, milk and flour

Ingredient:

- Acacia flowers, about two kilograms

- two kilograms of sugar (its a kilogram and a half of sugar for each kilogram of flowers, if you prefer a sweeter taste)

Method of preparation:

Keep acacia flowers in cold water, then wash the acacia flowers under a stream of cold water to remove dust, dry leaves or insects. The flowers are detached from the tails and boiled in boiling water for 20 minutes, after which they are left to cool and soak overnight, covering the pot in which they boiled. Then, strain the liquid through a fine sieve, then mix with the sugar and vanilla. Add the lemon slices. Boil together with the sugar until the syrup binds, as in jam. It is then stored in bottles or jars, kept warm, wrapped in beds, until completely cooled (about two days).

Depending on the taste, you can also use a mixture of acacia flowers with shock flowers.

It is consumed diluted in water or used to flavor lemonade. Acacia syrup can be consumed as such, with a teaspoon, just like honey, if you face various digestive problems or have a sore throat. It has a calming effect, due to the aroma, so it helps you sleep better and get over stress more easily. The same syrup is a good adjunct in curing diseases of the respiratory tract or nervous system.

Acacia flower jam

Ingredient:

- 500 grams of acacia flowers

- one squeezed lemon (or two, three if small)

Method of preparation:

Boil water and sugar until they form a syrup. The flowers separated from the clusters and the green part, well washed in cold water, are then scalded in boiling water. Drain well, then put in the syrup of water and sugar together with the lemon juice and boil until the jam binds. Its color will be dark. You transfer it to a clean jar and you can keep it over the winter. It can be served plain or as a topping for various desserts.

Acacia flowers in the dough

Ingredient:

- 20-25 fresh acacia flowers, in bunches

- 5 teaspoons of honey (also ideal for acacia)

- 2 tablespoons oil or melted butter

- a sachet of vanilla sugar

Method of preparation:

Wash the flowers well in cold water to remove dust, impurities or any insects, then place them on a clean towel to soak up the water. Mix eggs with sugar and salt until a thick paste is formed. Add the rest of the ingredients, mixing well. The dough obtained will be like the one for pancakes.

Pass the flowers through the dough and then fry them in a hot oil bath, like ordinary donuts. After draining the oil, you can serve them as such, powdered with sugar or a little honey.

Donuts or pancakes with acacia flowers

Ingredient:

- a cup of yogurt or whipped milk

- half a cup of sugar

- baking powder or baking soda, a sachet or a teaspoon

- flour, about half a kilogram

Method of preparation:

Acacia flowers are washed in cold water, then drained. Beat the eggs with the sugar and salt, then add the yogurt and flour. Bake the powder with lemon or vinegar and add it, or incorporate it into the flour beforehand. The dough will be a little thicker than the pancakes. As in the recipe above, the acacia flowers are passed through this dough or sprinkled with dough with a spoon, then fried in hot oil. If they have been shaken or you have already shaken them, you can mix them in the dough and pour the donuts with a spoon into the bowl in which you fry them. When it gets a golden color, put it on a paper napkin to drain the oil. Serve preferably hot, powdered with sugar or plain.

If you fry them whole, they will look like donuts. If you use shaken flowers, they will look flat, like pancakes or meatballs.

If you do not want to eat fried, you can try to place them in a tray, on a baking sheet and bake them over medium or high heat. They should be lightly browned in a few minutes.
